Keto Fudge Popsicles


Let me begin by saying: Dad, I get it now. Sorry for always leaving my popsicle sticks all over the place. Love ya!

Original recipe credit goes to SimplySoHealhty and I’ll be riffing variations off this recipe all summer! (next up: blackberries ‘n cream)

Whisk together over medium heat to a simmer:

  • 1 3/4 cup HWC or Coconut Cream
  • 2 1/2 oz. shaved unsweetened baking cocoa (could use cocoa powder)
  • 1/3 cup granulated monkfruit
  • 2 large eggs

Remove from heat and whisk in:

  • 3/4 cup unsweetened almond milk
  • 1 tsp vanilla

Pour into popsicle molds and freeze for 5 hours. Remaining mixture can be stored in fridge and added to empty molds when ready.
