Original recipe credit goes to SimplySoHealhty and I’ll be riffing variations off this recipe all summer! (next up: blackberries ‘n cream)
Whisk together over medium heat to a simmer:
- 1 3/4 cup HWC or Coconut Cream
- 2 1/2 oz. shaved unsweetened baking cocoa (could use cocoa powder)
- 1/3 cup granulated monkfruit
- 2 large eggs
Remove from heat and whisk in:
- 3/4 cup unsweetened almond milk
- 1 tsp vanilla
Pour into popsicle molds and freeze for 5 hours. Remaining mixture can be stored in fridge and added to empty molds when ready.
